Some of the stories on our wine list begin not in the Gnollhof wine cellar, but a few hundred metres further down, in the vineyards near Brixen. This is where Peter Wachtler, husband of your host Margit, runs the Taschlerhof Winery.
Once a week in August, September and October, join us for a special vineyard walk to the Taschlerhof and gain fascinating insights into the work of a professional winemaker.

A Winery That Is Part of Our Family
Peter Wachtler has been cultivating the vineyards surrounding his family farm south of Brixen since the early 1990s. The vines grow at an altitude of around 530 metres on steep, south-east-facing slopes. Abundant sunshine, the airy Brixen valley basin and lean slate soils shape the unique conditions at the Taschlerhof.
Five white grape varieties are grown at the Taschlerhof:
- Sylvaner
- Kerner
- Riesling
- Gewürztraminer
- Pinot Grigio
The wines of the Taschlerhof can also be found on the Gnollhof wine list. Their journey from the vineyard may therefore lead back into your glass during a peaceful evening at an altitude of 1,160 metres. When they are poured, we know not only where they come from, but also the craftsmanship and the winemaker behind them.
